THE OLIVES COME FROM THE AREA OF VOLOS. THE HARVEST BEGINS IN NOVEMBER. THE HEART IS MATURE, GLOSSY AND CIRCULAR. THEY HAVE A GREAT APPEAL TO THE DOMESTIC AND INTERNATIONAL MARKET. THE PROCESS OF BITTERNESS IS DONE WITH BRINE (SALTED WATER) AND THEY ARE CHARACTERIZED BY A BITTERSWEET TASTE, ESPECIALLY AT THE BIGINNING.
